Sesame Peanut Noodles

Boredom equals eating nowadays and this quick meal was the perfect after lunch, before dinner bite. Not only is it delicious but it took only 10 minutes to make and can be enjoyed hot or cold. As much as I miss my favorite take out restaurant, until it reopens this is satisfying my asian flavor cravings.


Sesame Peanut Noodles

Serves 3


Ingredients

2 packs ramen noodles (your favorite brand, but toss out the flavor packets)

2 Tbsp. pure sesame oil

1 1/2 Tbsp. peanut butter

2 Tbsp. honey

2 Tbsp. soy sauce

1 1/2 Tbsp. rice vinegar

1 Tbsp. Sriracha

1 garlic clove, minced

½ tsp. grated fresh ginger root

1/2 tsp. red chili flakes

Optional: 1 green onion, 1/2 tsp sesame seeds (toasted), 1 Tbsp chopped peanuts and 1/4 cup shredded cucumber


Method

1. Cook and drain noodles according to package instructions

2. In a medium bowl, add the sesame oil, peanut butter, honey, soy sauce, rice vinegar, Sriracha, garlic, ginger and chili flakes. Whisk until well combined. The peanut butter should completely break down to create a smooth sauce.

3. Pour the sauce over the hot noodles. Toss to coat thoroughly.

4. Optional: top each serving with 1 sliced green onion, ½ teaspoon of toasted sesame seeds, 1 Tbsp chopped peanuts and 1/4 cup shredded cucumber.
